Alta Langa is one of Italy’s rising regions for sparkling wines. Here, Chardonnay is grown at over 600 meters in Castino on soils of white clay interspersed with calcareous sands. Grapes are harvested in early September, fermentation lasts about a month, followed by one year’s maturation before the second fermentation in bottle. Released after 36 months, the „Blanc de Blancs? recalls dried fruits, bread crust, and honey, with a fresh, fragrant, and creamy taste.
