More information about Kiesbye’s forest beer The Wachau alluvial forest is a very special habitat. Lush meadows and small forests are fed by the many arms of the Danube and have adapted to the humid climate and occasional flooding over the centuries. Flora and fauna in floodplains live in harmony with the water and only flourish if they have enough of it nearby. The silver willow is a tree that can be found along rivers, streams and lakes throughout Europe. Unlike most trees, these special willows not only tolerate flooding and waterlogging well, they also need it for optimal growth. Meadowsweet is also at home near rivers. Long before you see its delicate flowers, you can already smell their fragrance: The cluster of delicate white flowers exudes an irresistible scent of almonds and honey.Master brewer and beer sommelier Axel Kiesbye spends his time in the forest with great passion. Every year, he hikes through Austria’s magnificent nature and collects the main characters for his forest beer. In 2022, it is the silver willow and real meadowsweet. As a basis, the creative brewer created a golden beer that was flavored with the bark of the silver willow and the dried flowers of the meadowsweet during the brewing process. The result is a fresh beer with an exquisite bouquet of apple notes, sweet hints and the aroma of spicy wild herbs.We also stock Waldbier in the elegant champagne bottle with a capacity of 0.76 l.
