“How could you resist this queen of gueuzes in her magnificent Art Nouveau bottle?”Oude Gueuze Cuvée René is one of the pearls of our brewery. With its golden color, brilliance and beautiful aroma of sherry, this is the queen of gueuzes.This old gueuze is a mixture of old and young lambic, matured in large oak barrels called foudres. Then it is bottled in a beautiful bottle of champagne, in which the second fermentation takes place. After 6 months, gueuze acquires a golden color, is slightly carbonated and tart. But kept for several years in the cellar, it becomes truly special!The use of a bottle of champagne dates back to an uncertain period when lambic brewers specialized in recovering empty bottles from great restaurants and other establishments where a lot of champagne was drunk. That’s why we chose the noblest of bottles to store our noblest beer.A mixture of 1/3 of an old lambic that is at least 3 years old and 2/3 of a young lambic that is at least one year old matures in huge oak barrels with a capacity of 2640 gallons (foudres). Young lambic still contains enough yeast and sugars to continue fermentation in the bottle. As a result of this process, carbon dioxide is formed, resulting in a slightly carbonated beer with a pleasant foam.Due to the second fermentation process in the bottle, its shelf life is the same as that of a good bottle of wine. Bottles can be stored in the basement lying on the sides. After transportation, a 3-day rest period will allow the yeast to settle to the bottom of the bottle.
