Beschreibung
Right in the middle of the village of Gols lies the Kalbskopf, a southwest-facing slope with soils of silty loam. Up to 25 years old are the vines from which the Stiegelmar estate harvests its Cabernet here by selective hand-picking. Fermentation on the skins takes place in open vats, followed by malolactic conversion, regular bâtonnage, and around 24 months of barrique maturation. The result is an excellent Cabernet Sauvignon, textbook in typicity, with deep color, intense cassis fruit, some blackberry, a touch of salted licorice, and firm yet soft tannins.
