Their method of choice is vacuum falling-film evaporation: after the brewing process is complete, the beer, which still contains alcohol, is filled into the specially developed system. Warm temperatures and a vacuum evaporate the alcohol. To ensure that no flavor is lost during this process, the evaporated aromas are returned to the beer. In this way, each brew can be dealcoholized while maintaining the same quality and taste. The Weihenstephaner Hefeweißbier Alkoholfrei produced in this way has a bright amber gold color and a rich yeast cloudiness in the glass. A spicy clove aroma rises from the fine-pored head.
