The Chardonnay from Elgin was pressed from whole grapes, fermented 100% spontaneously and aged for nine months in 35% new oak barrels without the addition of SO2. Paul Clüver’s wine, which has been awarded 91 points several times, has an intense aroma of ripe tropical fruits, stone fruits and baked apples, with hints of toast and pastries, honey and nuts. On the palate, it is ripe and fruity, citrusy and fresh, with a successful blend of fullness, energy and liveliness.
